Born and raised in Chile. Yesenia moved to the US back in January 2012 to live with her dad and stepmom. Lived in Miami for 5 years where she met the love of her life, and moved to Oregon where we gave birth to two amazing little girls.  My oldest daughter is named Elianna because of my grandmother who raised me and made me everything that I am today. A strong and an amazing woman, Norma Eliana Muñoz was raised in a small village in the southern part of Chile and moved to the capital of Chile, Santiago in her mid twenties where she fought for a dream of becoming something more than just a housewife. She worked very hard and was trained in the art of cooking from chefs of various restaurants in downtown Santiago. She used her skills to feed thousands of people. She later passed on her knowledge and expertise to my mother and me. Today, I own a food truck in Hillsboro downtown where I share a little bit of our culture and food and proudly present the same recipes that my grandmother used to delight many people at home and around back in Santiago, Chile. I work everyday to keep our small truck alive and authentic. We also participate in events closely with the Chilean community in Oregon as well as Washington and maintain a small Chilean Northwest community.

Later in episode, Ender Black, Director of Public Affairs at KBOO, will do a check-in with Consuelo.
